CarpetMan's Mexican Cornbread
1 cup corn meal (yellow)
1 cup milk
2 eggs
1 teaspoon salt
2 tablespoons cooking oil
1 can cream style corn
1 lb ground beef
shredded cheddar cheese (about 1 cup)
1 small can (4.5 oz) chopped green chilies
1 Teaspoon baking Soda.
While the meat is browning, mix the cornmeal, milk, salt, eggs, cooking oil, and cream style corn.
After meat is brown add the chilies into the meat. Grease a baking dish and pour in half of the corn mixture. Add the meat on top of the mixture you poured in. Top the meat with the grated cheese. Then pour rest of corn mixture over that. Bake at 400 for 30 minutes. Please give me feedback if you try it.
