Hindsight's Red Eye Gravy

Christmas brings back memories of my parents, now gone, and the Christmas' we used to have. My mother made ham and Red Eye Gravy (aka Blacksop) with biscuits and potatoes for breakfast. There is probably more than one way to do it, and a lot of you have never had it. I just fixed some and I'll tell you how she taught me to do it. Just fry some ham in a big skillet and when it's done pour in about a cup and a half of coffee (the liquid, not the ground granules), bring to a boil and then simmer for 5 to 10 minutes. Best to remove the ham, except for some bones and fat chunks, before you boil it. Sounds bad, tastes good. My mother was a great cook. She cooked for Happy Chandler back in the 30's. I think that was between his terms of Governor of Kentucky and Commissioner of Baseball. And then there's fried green tomatoes, green beans with new potatoes....
