like I said before, I buy my cornbread mix from the store, but my MIL brought me some cornmeal from West (BY GOD) Virginia, that she says is the best, here is that recipe:
2 Cups Cornmeal
1 cup flour
t tbsp sugar
1 1/2 tsp salt
1 tbsp baking powder
2 eggs
2 tbsp oil
1-2 cup milk
combine everything except oil and stir in enough milk to make a thick batter. heat oil in skillet, pour into batter, mix. pour batter into skillet. cook over medium heat, turn to brown both sides. Personally I would treat this recipe like pancakes as well.

I've got to jump in here on the fried cornbread 'cause it's one of the reasons I weigh 235 pounds.... If you use either the muffin mix or regular ground corn meal first boil a couple cups of water. Then slowly add the boiling water to the meal. This actually is what cooks the meal. Then spoon the meal (mush) onto a hot greased griddle into patties about 3 inches in diameter. That's about the right size for hanging on to after you've buttered & jellied it. Make them about 4 inches if you intend to butter & syrup 'em. As good as this stuff is with any kind of beans, my favorite is fried cornbread & any kind of pan fish.... Try it, you'll like it.
