Chargar's Chili
A world class chili receipt from Cousin Sonny via Charles Graff
Ingredients
4 lbs of coarse ground beef, venison or fresh road kill
4 chopped medium onions
1 clove garlic
4 heaping T of Morton's chili powder
1 green pepper (jalapeno ain't bad, but wimpy peppers will do)
1 t celery seed
1 pinch allspice
1 can tomato paste
1 bottle catsup
Bit of brown sugar
Salt to taste
Water to be determined
Brown the meat, onions and garlic in a special chili pot. If you don't have a chili pot buy one. In case you are stupid, a chili pot is always cast iron.
Add the other stuff.
Simmer 3 to 4 hour with the lid off, adding water as you need to keep it chili like. Salt it until it tastes real good.
Road Kill Notes:
1) The smell is the best indicator of freshness.
2) You can make chili out of anything that had hair on it when it was alive. If it had feathers, scales or slick skin then it ain't chili fixins.
